Bubur Bali is the island’s savoury breakfast porridge: soft rice cooked down to a comforting congee and topped Balinese-style with shredded spiced chicken, crunchy peanuts, fried shallots, vegetables, a drizzle of broth and a spoon of sambal. It is warm, soothing and quietly addictive.
Unlike sweet porridges, bubur Bali is firmly savoury. The toppings — including urab (spiced vegetables) and sometimes a little sate — turn a simple bowl of rice into a complete morning meal.
Sold from morning warungs and market stalls, it is what many Balinese eat before the day’s heat sets in. Get there early; the best stalls sell out.
Rice porridge is eaten across Asia, and Bali developed its own savoury, sambal-laced version layered with the island’s spice-paste toppings — a breakfast tradition tied to early-morning markets.

A vegetable version exists, but bubur Bali is usually topped with shredded chicken, peanuts and sometimes pork; the base porridge itself is plain rice.
“Bubur tanpa daging?” — porridge without meat?Jain note: Balinese cooking uses garlic, shallots and shrimp paste (terasi) widely. Jain travellers should ask for dishes without onion, garlic and terasi — easiest at vegetarian warungs in Ubud.
