Nasi campur Bali is the island’s signature plate: a mound of steamed rice surrounded by small portions of many dishes — sate lilit, lawar, shredded spiced chicken (be siap base genep), peanuts, vegetables, a boiled egg, crispy tempeh and a fierce sambal. It is the single best way to taste Balinese cooking in one sitting.
Every warung builds its nasi campur differently, so no two plates are alike. The components change with what was cooked that morning, and the sambal — often sambal matah or sambal embe — ties it together.
From humble street warungs to famous specialist shops, nasi campur is where Balinese flavour lives. Point at what you want, or take the cook’s standard selection (campur means “mixed”).
Nasi campur reflects the Balinese way of eating — rice at the centre, with many small spiced side dishes shared from the kitchen. It evolved from home and ceremonial cooking into the warung classic travellers love.

“Nasi campur vegetarian” — widely available in UbudJain note: Balinese cooking uses garlic, shallots and shrimp paste (terasi) widely. Jain travellers should ask for dishes without onion, garlic and terasi — easiest at vegetarian warungs in Ubud.
